Estabilished since 1983 in Sansepolcro, within the historic former sacristy of the Camaldolese monks, it offers an elegant, warm and carefully curated setting, where every detail speaks of a passion for cuisine and hospitality. Managed by Sara Emanuela Battistelli since 1998, the restaurant features young chef Andrea Ardanese, a graduate of the ALMA school, in the kitchen, and Serena Rossi, a 10-year member of the staff, who works daily with love and passion. It’s philosophy is simple yet profound: fresh, seasonal ingredients, artisanal rigor, and respect for the land. The pasta is hand-rolled as it once was, the ingredients are carefully selected, and the condiments are pared down to the essentials to enhance the flavors. The attentive and knowledgeable service guides the selection of dishes and wines, making every experience a sensory discovery.
